APPLE, MINT, SPINACH, LIME AND CUCUMBER JUICE
Ingredients
- 1 Green apple, cored and cut into slices
- 4 Mint sprigs, leaves only
- 1 ½ Lime, juiced
- ½ Cucumber, roughly chopped Handful of spinach leaves, washed
Method
- Add all the ingredients into a blender and blend until smooth.
- If the mixture needs a little help going through a juicer, then add a little cold water as you juice.
- Strain the juice in a jar before serving it in a tall glass with some ice.

VEGETARIAN BEAN BURRITO

Ingredients
- 1 Wholegrain tortilla
- 1 can Black beans, drained
- ½ cup Sour cream
- 1 tbsp Chili powder
- 2 cups Cooked rice, leftover rice
- ½ tsp Cumin
- 2 Lime, juiced
- 1 tbsp Hot sauce
- ½ Onion, diced
- Salt to taste
- 3 cloves Garlic, minced
- Fresh cilantro, chopped
- 2 tbsp Vegetable oil or olive oil
Method
- Heat a non-stick pan and grease it lightly with oil.
- Sauté onion and garlic in vegetable oil or olive oil for 2 to 3 minutes.
- Toss chopped cilantro and squeeze some lime juice over the leftover.
- Pour rice into the pan and give it a quick stir.
- Reduce the heat to medium-low and add black beans and season with chili powder, cumin, hot sauce and a pinch of salt. Cook until the beans are thoroughly cooked.
- Wrap your bean and rice in tortilla and serve it with some sour cream on the side.
