Comforting soups for the urban soul

A warm bowl of hearty soup is a great companion for every moment in life – celebrations, heartbreaks, me-time and especially when you’ve the sniffles. Soups are easily available in processed forms such as powdered or condensed in a tin but it is the home-cooked favourites that are packed with natural flavours and nutrients. The best part of cooking your own pot of soup is that you don’t need to worry about excessively high sodium content and you have the flexibility to add your favourite ingredients! This month, we share a simple soup recipe, which can also be turned into a creamy soup for the family.
Hearty Chicken Soup
Ingredients
2 kg | Chicken, cleaned and chopped into pieces |
3 | Carrots |
1 | Yellow onion |
100 g | Shimeiji mushroom |
1 ½ litres | Filtered water |
1 ½ tsp | Salt |

Method
- In a deep pot, bring water to boil.
- Then reduce the flame on your stove and add chicken,
carrots and yellow onion. - Boil about an hour and then, add Shimeiji mushroom
and boil for another 30 minutes. - Lastly, add salt to taste and enjoy immediately

Cream of Spinach
Ingredients
1 portion | Hearty chicken soup |
150 g | Baby spinach |
3 tbsp | Cream |
Salt | |
Black pepper |

Method
- Remove any bones from the chicken soup and cool to
room temperature. - Then, in a blender, blend small portions of the soup
together with the baby spinach until a smooth and thick
consistency is formed. - Return the blended soup to a pot and bring to a boil.
Lastly, add cream and season with salt and pepper if
necessary.

NOTE: If you may turn any leftover soup into a cream of spinach soup with this simple recipe!
