Coming home from a long day at work and to only realise that you have a long list of things to do can feel daunting. Wouldn’t it be nice to be able to unwind over a nice of bowl something warm while listening to your favourite podcast or catching up on a TV series.
These soups are simple to make and if you make a large batch of it, all you’ll need to do is to portion them and you may enjoy them during a busy or tiring day.
Mushroom Soup

Ingredients
- 500g Button mushrooms (white, brown or both)
- 150g Shitake mushrooms
- 50g Dried shitake mushrooms
- 1 litre Chicken broth
- 1 Yellow onion, diced
- 3 Cloves of garlic, minced
- 3 tbsp Unsalted butter
- 3 tbsp All-purpose flour
- 100g Parmesan cheese, grated
- 50ml Cooking cream
- 2 sprigs of thyme
- Salt
- Black pepper
Method
- In a large pot over medium heat, melt butter and fry onion and garlic.
- Then add thyme and stir until onion has softened.
- Next, stir-fry mushrooms and close the pot with a lid. Cook for about a minute or two.
- Then, add flour and mix well.
- Gradually pour in the chicken broth while continuously stirring the mushroom mixture and bring to a boil.
- Then, turn off the heat and with a hand blender, blend mushrooms until fine.
- Mix cooking cream and Parmesan cheese and season according to taste.
- Enjoy immediately or cool it down and freeze according to your desired portions.
Pumpkin Soup

Ingredients
- 800g Pumpkin, sliced
- 1 litre Vegetable or chicken broth
- 3 cloves Garlic, diced
- 1 sprig Fresh thyme
- 1 tbsp Butter, unsalted
- Salt
- Black pepper
Method
- In a pot, melt butter and fry garlic together with thyme.
- Then, pour vegetable broth into the pot as pumpkin and boil until pumpkin softens.
- With a hand blender, blend soup until a smooth consistency.
- Season with salt and pepper to your desired taste.
- Enjoy immediately or cool it down and freeze according to your desired portions.
